Halibut and Zucchini is a super fast, and really tasty way to use fish. Halibut fillets are steamed with zucchini in a flavorful broth. Soy sauce, ginger, onions and garlic combine perfectly to enhance a mild fish and vegetable. It’s a nice texture and if you don’t want to use the oven, it can easily be made in an electric skillet in the kitchen or RV. This dish is low in fat, and if combined with brown rice, it becomes high in fiber.

Instructions
  1. Rinse the fillets and pat dry. Place in a buttered baking dish.
  2. Slice zucchini in 1/4" rounds and arrange (overlap) the zucchini on each fillet.
  3. Heat oil and stir fry garlic, ginger and the sliced red onion for 30-45 seconds, stirring constantly. Add the broth, soy sauce, black pepper and bring to boiling. Pour around fish, and cover baking dish with foil.
  4. Bake at 500 F. for 5-8 minutes. Fish should be firm to the touch when finished. Do not overcook. Garnish with the sliced green onions and almonds.
Recipe Notes

You may use an electric skillet instead of the oven: Stir fry vegs in oil (Almonds may be used in the stir fry prep), add broth, soy sauce, black pepper and place fish and zucchini in the broth mix. Cover and steam thoroughly to cook thru.
Halibut and Zucchini is good served with rice pilaf and salad.
For 2 servings: use half the ingredients
