Hot Sausage Rolls are a slightly different take on Pigs in a Blanket. You can make them for an appetizer, a pot luck, or a fun lunch for the kids. They should be served warm from the oven if possible to keep the best flavor of the sausage. Try spicy Polish Sausage, Beef Smoked Sausage or even Bratwurst in this flaky pastry.

Instructions
  1. Measure flour into mixing bowl. Cut butter into 1/2" sized pieces. Using pastry cutter, cut into flour until mixture is in pea size pieces.
  2. Stir in cottage cheese until a stiff dough forms. Use a small amount of water if necessary to get the right consistency. Don't allow dough to be too sticky. Divide into 6 parts.
  3. Roll each part to make a rectangle 6" long and 3" wide. Spread each with a small amount of the mustard. To with a whole sausage.
  4. Roll pastry around the sausage, encasing it completely. Brush edge with water to help seal stick. Seal the edges and place seam side down on a cookie sheet. rick once or twice with a fork to allow steam to escape. Repeat with all the sausages.
  5. Mix the egg and milk and brush pastry coated sausages with mixture. Bake at 400 F. for 20-25 minutes or until nicely browned. Slice into 1" pieces to serve.
Recipe Notes

Serve 1" pieces with a cocktail pick for parties. Pastry coated sausages can be prepared in advance and refrigerated. Bake and slice just before serving. Good served with additional mustard for dipping if desired.
