  • 1 can Green Giant Whole Kernal Corn 17 oz drained
  • 1 Bell Pepper chopped

Instructions
  1. Layer potatoes evenly in oiled baking dish. Sprinkle with salt and pepper. Spread corn over the potatoes. Sprinkle with bell pepper, onions and carrots.
  2. Crumble beef over the top, sprinkle with additional salt and pepper and marjoram. Top with tomato sauce and spread out evenly.
  3. Bake covered at 350 F. for 30 minutes. Sprinkle with cheese over the top and bake 10-15 minutes longer until the cheese is melted and bubbly.
Recipe Notes

This casserole is really yummy reheated the next day. With no wheat ingredients, the casserole is also gluten free.

Please note:  You may have to adjust baking time according to your altitude. High altitude may take a few minutes longer to bake. Casserole is done when a fork easily pierces the carrots and potato layer. You may want to precook the carrots a few minutes in the microwave before assembling the casserole - it will assure they are soft.

Note: Don't add any more liquid than specified in the recipe. The casserole will very juicy on its own.
