Lentils Au Gratin is a vegetarian dish which is a hearty main dish casserole topped with cheese – which provides high protein content without meat. Lentils are also very inexpensive. The casserole can be served with a crisp spinach salad, French bread and butter and a full bodied California Burgundy wine.

  • 3 cups Cooked Lentils
  • 2 Tablespoons Salad Oil
  • 2 small Yellow Onion chopped (about 1 cup)
  • 2 Carrots chopped (about 1 cup)
  • 2 stalks Celery chopped (about 1 cup)

  • 1/2 teaspoon Black Pepper

  • 2 Tablespoons Whole Wheat Bread crumbs

Instructions
  1. Cook lentils for about 1 hour. Drain well. (See recipe notes about how to cook lentils)
  2. Heat oil in heavy skillet. Add the onions, carrots and celery. Saute for 5 minutes over medium heat until the vegetables are brightly colored and tender.
  3. Add the cooked lentils, salt and pepper. Turn into shallow baking-serving dish. Top with cheese. Mix bread crumbs with melted butter and sprinkle over lentils.
  4. Broil in preheated broiler until cheese melts and dish is hot. Sprinkle with parsley if desired. Serve immediately.
Recipe Notes

To cook lentils, remove any foreign particles and wash. Cover with about 2 inches cold water. Heat to boiling. Stir and allow to stand for 1 hour. Drain, and then begin with the above steps to prepare.

Lentils Au Gratin may be prepared in advance (except for the final broiling) and refrigerated. Allow casserole to approach room temperature before broiling and heat though.

For 2 servings: use half the ingredients

For 8 servings: double the ingredients
